By sharing best practices in farming and processing with its members, the co-op not only showcases the growing promise of Honduran coffee but also fosters a future where coffee farmers thrive alongside their crops. Stories of great coffee are often stories of human
connection. Nowhere is this more beautifully evident
than in the Southern Highlands of Tanzania's Songwe
region, near the small town of Iyenga. Here smallholder
farmers form AMCOS (agricultural marketing
cooperative societies) to support one another in an
entirely communal approach to coffee cultivation.
In this arid, high-elevation setting, speed and efficiency
are of utmost importance; fresh coffee cherries must be
transported quickly to washing stations to ensure high
quality, so trucks and motorbikes wait nearby to move
cherries within eight hours of picking. The result is a
cup that shines brightly with clean citrus character
while reminding us of the power of community.

In Latin America, coffee farms are often run by families, with their own homes on the same land where their coffee grows. We've sipped coffee with these farmers for decades, sitting on their verandas, overlooking the lush beauty of the coffee trees rolling out in the distance. Most times it was a lightly roasted coffee like this one. It took us more than 80 tries to get it right-mellow and flavorful with a nice softness.
